Hey there loves!
I’m Caitlin, the crazy foodie behind Kale It in the Kitchen. First off, thank you so much for stopping by my little section of the internet. (Seriously, I appreciate it.) Second, if you’re here then you’re probably thinking one of two things.
- “I’m hungry”
- “I need food now!”
Orrr maybe that’s just me whenever I cruise the net. Either way, I’ve got you covered! But first, a little more about me. I’m a twenty something Catering Sales Manager from San Diego, California and I am obsessed with cooking! Yep I basically spend all day around food, creating menus for clients just to come home to cook my own food and create tasty recipes for all of you. See obsessed….but I wouldn’t have it any other way. I’m a fitness enthusiast, huge nut butter addict and lover of all things pink…and sparkly.
I was once described by someone as “a pink glazed donut with silver sparkles on top…” And if that doesn’t perfectly describe my personality then honey, I don’t know what will.
But my positivity and love of food wasn’t always this way though. When I was in high school I was diagnosed with an eating disorder that pretty much turned my world upside down. I had no clue how to eat or fuel my body correctly and was constantly fearing the dreaded “excess calories & fat.” Thankfully, one day that all changed with a simple guacamole recipe. (Ummmm what? -Keep reading, I promise it gets better.) It was for a project in college where I had to give a “how to” speech on how to do something, and lucky me got stuck with guacamole. I remember being completely baffled when I read the ingredients because at the time, guac was considered the devil, but the ingredients I saw were just that; ingredients. Simple, to the point, real, raw ingredients. (Nothing scary there right.) It made me realize that if I actually started looking at recipes and tried cooking on my own that these once “fear foods” suddenly became normal, and dare I say it…exciting. And viola – crazy foodie Caitlin was suddenly born!
So while everyone seems to have their own idea of what healthy looks like these days, my definition is simple: real food! That’s why here you’ll find simple, easy to follow recipes using REAL ingredients that are REAL tasty and REAL delicious – with the occasional indulgence thrown in there too. Because balance is key when it comes to your health and I personally believe that you should never have to choose between a salad and a fat slice of triple chocolate cake.
